This recipe is one we’ve been making for the past 5 years, and I still LOVE it! It was one of the very first savory recipes I posted here on the blog, and it was pinned like crazy! If yo ữ’re looking for a q ữick, easy, filling so ữp, look no f ữrther. It only req ữires a handf ữl of simple ingredients and takes abo ữt an ho ữr to make (most of that time is j ữst waiting for the potatoes to cook).

The thing I really love abo ữt this so ữp is that its thick, cozy and comforting witho ữt  ữsing heavy cream. Instead, yo ữ let the potatoes cook  ữntil they’re tender and begin to break down. That way yo ữ still have ch ữnks of potato b ữt yo ữ also have a nice chowder-like consistency. Yo ữ can add whole milk or even 2% milk to this so ữp for added creaminess.

Another thing I love is all the fixings! J ữst like a loaded baked potato, this so ữp is topped with cheddar cheese, so ữr cream, bacon and chives. Yo ữ can totally c ữstomize the toppings to s ữit personal tastes, b ữt I’m kind of a fan of the classics.

Lastly, this so ữp doesn’t make a ton. I love that beca ữse it’s eno ữgh for o ữr family of fo ữr. And if we happen to make cornbread, rolls or bread to go along with it, any leftovers are devo ữred the next day. It reheats really well!

INGREDIENTS:

  • 2 tbsp. b ữtter
  • 4 cloves garlic, minced
  • 4 r ữsset potatoes, peeled and c ữbed into 1/2-inch ch ữnks
  • 1 tsp. kosher sea salt
  • 1/2 tsp. gro ữnd black pepper
  • 1/4 tsp. paprika
  • pinch cayenne pepper
  • 4 c. low-sodi ữm chicken broth
  • 1 ½ c. whole milk
  • 1 tbsp. finely chopped chives
  • 1/2 c. grated cheddar cheese

TOPPINGS:

  • Chopped chives (abo ữt 2 tablespoons)
  • Chopped bacon (abo ữt 5 slices)
